Slow Cooker Peanut Chicken with Cauliflower Mash!

Recently I have been craving Chicken Satay from our local Chinese takeaway, not healthy at all but delicious. So with the help of my fitness pal app and a handful of recipes on Chicken Satay I have created a slow cooked peanut chicken to die for, in fact it was so good it will be saving us £'s and will help our expanding waistlines!

Prep/Cooking time 6hrs

517 calories a portion, to order this at a takeaway it would cost you around 825 calories a portion! 

So here is what you will need


  • 2 chicken breasts (around 350g)
  • 1 red pepper, seeded and sliced into strips
  • 1 onion, roughly chopped
  • 250ml chicken stock (1 oxo cube)
  • 2 tbsp light soy sauce
  • 1/2 tbsp of ground cumin
  • 2 minced garlic cloves
  • half a dorot cube of frozen chilli
  • 1 tbsp cornflour, mixed with 2 tbsp of water
  • 50g smooth reduced fat peanut butter
  • 1 tbsp dark soy sauce
  • 1 lime, juice squeezed  
  • 3 spring onions, chopped
  • 1/2 tsp of salt and pepper
  • Head of cauliflower chopped
  • 1/2 tsp of salt and pepper

First cut the chicken breast into thick strips lay into the slow cooker along with the red pepper and onion. 

Next pour in the stock and 2 tbsp of light soy sauce, then sprinkle in the cumin, garlic, 1/2 frozen chilli cube, salt and pepper. Stir well, then pop the lid on and cook on low for 5 hours. If it starts to dry out (around 3hrs later) tip in a cup of boiling water from kettle

Remove 7 tbsp of the liquid from the slow cooker, and mix into a bowl containing peanut butter, dark soy sauce and juice from the limes. Stir the mixture into the slow cooker. 

Next pour the cornflour mixed with cold water into the slow cooker, give it a good stir, sprinkle in the chopped spring onions, turn up to high for 30 minutes

Whilst this is cooking put your cauliflower into a pan of water, bring to the boil and simmer for 15-20 mins. (I like it nice and soft!) Drain and mash, stir in salt and pepper. 

Spoon cauliflower mash onto plate and spoon my delicious peanut chicken on top!

Alternatively if you wanted to up the calorie count you could have it on top jacket potatoes, mash, rice or with a big naan bread to mop up the juices!
